Ventilation
We recommend that the workshop width not exceed 35 meters, with 30 meters being optimal.
The clear height of the main production workshop should be no less than 5 meters.
A "low-in, high-out" ventilation system is recommended.
Where feasible, an intake air filtration system should be installed.
If mechanical ventilation is used, the air change rate must be no less than 3 times per hour.
Airflow within the workshop should move from clean areas toward non-clean areas.
For production in cold regions during winter:
Use a warm-air intake system, with 75% of the air recirculated within the workshop and 25% exhausted outside.
Workshop Layout
The workshop layout should facilitate smooth coordination among all production stages while enabling effective hygiene control throughout the processing workflow, thereby preventing cross-contamination.
The production process for tofu skin (yuba) generally follows this sequence:
Raw materials → Primary processing → Secondary/deep processing → Inner packaging → Outer packaging → Warehouse storage,
which corresponds to a flow from non-clean to clean zones.
Therefore, the workshop layout must follow the sequential order of the production process, ensuring that products move progressively from less hygienic areas to cleaner ones. Cross-traffic or reverse flow in the process is strictly prohibited.
Effective physical separation must be implemented between clean and non-clean zones to control personnel and material movement, minimizing the risk of cross-contamination.
Product transfer between zones must occur via pass-through windows (transfer hatches).
Additionally:
Dedicated tool/equipment cleaning and sanitizing rooms should be located at appropriate positions within the workshop.
These rooms must be equipped with washing sinks, sanitizing tanks, and rinse tanks.
Where necessary, hot and cold water supplies should be provided, with hot water temperature no lower than 82°C (180°F).
Water Supply in the Workshop
The water supply pipes within the workshop should be made of materials resistant to rust. The direction of water flow should be opposite to the processing flow, i.e., from clean areas to non-clean areas.
